Tasty Tuesday ~ Chicken Alfredo Lasagna



This is from the Nashville Needlework Market cookbook, by Lucy Galgano

Ingredients
1 lb lasagna noodles
2 cups cooked and shredded chicken
2 jars of Alfredo sauce
1.5 cups shredded mozzarella cheese
1 cup grated parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
salt and pepper to taste
4 cups fresh spinach, washed and chopped (I just used frozen, and added in the amount I wanted)


Directions
Preheat oven to 375. Cook lasagna noodles. Mix shredded chicken, alfredo sauce, garlic powder, onion powder, Italian seasoning, salt and pepper in a bowl.

Layer chicken mixture, noodles and spinach (again I just mixed mine in with all of the above) in a 9 x 13 pan. Top with remaining Alfredo, sprinkle with cheese.

Bake covered for 25 minutes, then removed tinfoil and bake an additional 25 minutes, until golden brown.

First Things First...

Hello! It's a new week and another installment of Toni Taddeo's Tuesday 4. I debated over the word episode and ended up with installment but I am still not satisfied. Oh well, here is is whatever it is and I do hope you enjoy joining in. Let's talk about firsts in your life.




1. Do you remember your first pair of grown up style shoes, maybe high heels? How did that go? oh boy, probably 6th grade for some school function, or for Easter, but I can't remember

2. When was your first date and do you recall their name and where you went and what you did? Todd, went to McD's for a quick pop in to see the gang, then off to see Crocodile Dundee

3. Do you have any memories of your first job? oh the memories I have from working at McDonald's.... the crew I worked with was the best, and the majority of them I am still friends with today.

4. What do you remember about your first home away from Mom and Dad? It was when I went to college and was in a dorm room with 3 other gals.

The weather... Its 17° right now, and the high for today is 40°.

As I look outside my window... It's still dark out and looks really cold!

Right now I am ... I am working on this blog post before work

Thinking and Pondering... of all the events that have transpired over the last 2 weeks... lots of words, lots of crying, lots of loss.... I hate that my boys are the brunt of this situation and are going through everything that I have gone through over the many, many years... will this be the wake up call she needs, probably not, but that is her loss. Its all been laid at the foot of the Cross once again!

How am I feeling... tired, so very tired

On the breakfast plate... Herbalife shake, banana caramel

What I'm wearing... Pink top with blue flowered leggings

On my reading pile... nothing at the moment

On my tv... Chicago Med/Fire/PD - Bacherlor (still a guilty pleasure), Farmer wants a wife (I think thats the title)

Monday ~ spaghetti, garlic bread and a salad
Tuesday ~ roast, carrots and potatoes
Wednesday ~ eggs, sausage and toast
Thursday ~ pizza

Looking around the house... I've got some cleaning to do, the kids were over last night for a birthday dinner for the oldest and the grand dogs were over as well.... so there are toys everywhere. I was too tired to clean up after they left.

For Today... February 4th, 2024

The weather... Its 27° right now, and the high for today is 45°.

As I look outside my window... I love not seeing lots of snow! We have had some awesome weather for th end of Jan into Feb!

Right now I am ... I am working on cross stitch project before I head upstairs to log in to work

Thinking and Pondering... Why people do the things they do.... it was a long weekend of frustration and trying to come up with a reason why this person is the way they are! Things will never change, so why do I let it get to me.... because I hate to see the ones I love be hurt by this individual!

How am I feeling... ready for this week to go by fast as I have a fun weekend away to meet up with a friend to just stitch/veg/chat!

On the breakfast plate... McDonald's.... got a craving for a McGriddle

What I'm wearing... Purple top and jeans, got dinner plans with the cousins

On my reading pile... nothing at the moment

The weather... Its 33° right now, and the high for today is 39°.

As I look outside my window... Its still dark

Right now I am ... I am working on cross stitch project before I head upstairs to log in to work

Thinking and Pondering... I need to find someone to come out and take a look at the mess of the gutter situation from this last week. With all the snow we got a few weeks ago, left a mess, with an ice jam, that let loose on Friday, and down came the gutter, thankfully it didn't land on my car! (pic below in from the camera)

How am I feeling... tired and ready for this last week of training to be done at work, so I can get back to normal of just answering the phones

Happy Homemaker Monday

Oh my, where have I been? No where really. Time/life just got in the way. The last HHM I participated in was Oct of 2022 ~ sheesh! So much has happened in the last year and a half! Working full time does take a toll on you, and the nights just seem to go by way to fast before I know its its time for me to head off to bed.

We gained a daughter in August. Our oldest got married to a wonderful girl, Ivy. Not only did we gain a new daughter, but a new family as well. Her mom and step dad, brother and his girlfriend are treasures. So the planning and leading up to the wedding, with showers and what not kept us busy.


And just when you think its time to get back into a routine of everyday life, they surprise you! We planned an outing to go to Frankenmuth for us gals, that the guys proceeded to jump in and say, hey we want to go to. So We picked a Saturday in Oct to head over for the day. Ivy and Christopher wanted us to all meet up in the parking lot before heading out to see the sights, as they had a thank you gift for us parents for helping with the wedding.... I thought was strange, as no gift was necessary, as it was our honor to help with the wedding. So we were each handed a black box, to be opened all togheher... um, ok... So we all opened up at the same time, and this is what we found...


I added the back drops of the blankets, and had posted on instagram team blue or team pink... of course I was team pink! Oh the joy! So everything shifted to all things baby! Leading up to Jan 13th, when we had the gender reveal party. I couldn't whip out the needles/hooks/yarn, as I didn't want to do things gender nuetral, so the wait was long. I have a video on my you tube, that has the video of the reveal, you can watch if you want, the clip is towards the end. But we will have a granddaughter come June 10th of this year!

So this Grammy Jo is geared up to create oh so many girlie things! Its been a long while since there has been any littles, and girls at that rate. I've got a blanket in the works, as well as a cute little granny square teddy bear, and sweater. She wants a teddy bear themed shower that her mom and I are planning with her brother's girlfriend as well. They want a combined shower for both sides, so it shall be interesting, but fun!

So that's whats been going on in my little corner of the world for the last yearish. Oh, and we got a new dog. I had said no more pets after we lost Lici, but hubs wanted a bulldog.... we made it a year with no pets, but I am adamant that after her we will be getting no more. She has been a handful over the last year, kinda another reason I went mia here in cyber world.

Snowfall Sweater Scarf

Is it a sweater, a scraf or a wrap? Its all three! I first saw this on instagram and wanted to make it... but in purple of course. Why? Well if you don't now me by now, then who are you? LOL Purple is my color! I started this back in Oct, and was cruising right along, thought I had it finished, and could not figure out why it didn't fit correctly.

So I went back and re-read the directions, and said, yep, yep, yep... why isn't it working. So I thought, just rip it out to the mid point and add in more rows. While upon doing that, the light bulb went off, and I read them one more time and did the ole, could of had a V8, slap to the head. Guess I need to learn to read correctly! So after seeing my mistake, I was back up and running, and finished this on Jan 5th.

This is going to be my recliner chair sweater/scarf. I was looking for something other than a traditional wrap or blanket, to use while I am working on various crafty projects at night durning the cold months. This is going to be perfect. Tasty Tuesday ~ Monte Cristo Sandwich

I will preface I did not make them with 3 slices of bread per sandwich, my slices were thick enough, and did not use turkey (the hubs is not a fan).

Monte Cristo Sandwich

Ingredients
2 eggs
1/4 cup milk
2 tablespoons butter
12 slices white bread
1/4 cup mayonnaise
1/4 lb deli sliced ham
1/4 lb deli sliced turkey
8 slices Swiss or Provolone cheese
Powdered sugar and raspberry jam, for serving


Instructions
In a shallow dish, whisk together the eggs and the milk.

Melt the butter in a large skillet over medium heat.

Lay 4 pieces of bread down and top with 1 slice of cheese on each piece of bread. Place 1/4 of the ham on top of each piece of cheese.

Take 4 more slices of bread and spread about 1/2 tablespoon of mayonnaise on one side. Place the mayonnaise side down on top of the ham, then spread another 1/2 tablespoon of mayonnaise on the opposite side of the bread. Repeat with the 3 remaining sandwiches.

Place 1/4 of the turkey on top of each sandwich, then top with another slice of cheese. Place the last 4 slices of bread on top of each sandwich.

Press down on each sandwich firmly to press together slightly.

Dip each sandwich quickly into the egg and milk mixture. They need to be coated, but not soaked.

Place the sandwiches in the skillet with the butter. Cook until the bread is toasted and the cheese on the side against the skillet is melted, then carefully flip the sandwich over and cook the other side.

Slice the sandwiches in half to serve, and serve dusted with powdered sugar and a side of raspberry jam for dipping, if desired.

The weather... Its 39° right now, and the high for today is 47°.

As I look outside my window... Its still dark out...and with the temp showing on my phone, its a bit chilly out there.

Right now I am ... Typing up this post and listening to the Chicks on the Right podcast

Thinking and Pondering... About my upcoming trip to Utah this month. I think I have everything squared away as to what I am taking, and wearing, now to get the hubs ready for me being away for the weekend.

How am I feeling... tired, we stayed up late watching football.

On the breakfast plate... water and a chocolate fudge poptart

On the lunch plate... not sure yet

On the dinner plate... sketti, its Monday after all

What I'm wearing... a purplish long sleeve top and a pair of black leggings

Looking around the house... I did my pre/deep clean before going away clean, so we shall see how it is once I get back home.

To Do List... call the bank to put the travel alert on my debit card, and call pre check in

From the camera... The hubs and I went on a drive up north, and took the route of M-37, and took it to the very end, which dead ended into Lake Michigan at the 45 Parallel at Old Mission Point. We saw "bigfoot" (lol). Stopped by my high school, and saw that they now have a memorial up front from a few former alumni from the Veitnam War

New recipe I tried last week, or one that we really enjoyed, or one I want to try... I tried out the 2 ingredient bread recipe and made bagels, you can see it here.

To relax this week, I will... cross stitch and possibly some crocheting.

On my prayer list... All my stitchy friends, for safe travels to and from Utah this coming weekend.
