Morning Glory Muffins
2 cups all-purpose flour
1 cup white sugar
2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp salt
1 cup grated carrots
1 cup grated zucchini
1 large grated apple
3/4 cup flaked coconut
1/2 cup dates, pitted and chopped
1/2 cup chopped nuts
3 eggs, beaten
2/3 cup vegetable oil
2 tsp vanilla
Preheat oven to 350 degrees. Prepare muffin pans by either spraying with cooking spray or using muffin papers.
In a large mixing bowl, combine flour, sugar, baking soda, cinnamon, nutmeg and salt.
In a second bowl, combine carrots, zucchini, apples, coconut, dates and nuts. Stir in eggs, oil and vanilla. Add this mixture to the dry ingredients; stir until smooth.
Spoon or scoop the batter into the prepared muffin pans. Bake 18 to 20 minutes.
Makes 18 muffins.
