White Chocolate Cranberry Cookies


Ingredients

1/3 cup butter, softened
1/2 cup packed brown sugar
1/3 cup sugar
1 egg
1 tsp vanilla
1 1/2 cup flour
1/2 tsp salt
 1/2 tsp baking soda
3/4 cup dried cranberries
1/2 cup white baking chips

Directions:
 1.  In a large bowl, beat butter and sugars until crumbly, about 2 minutes.  Beat in egg and vanilla.  Combing the flour, baking soda and salt; gradually add to butter mixture and mix well.  Stir in cranberries and chips.

2.  Drop by heaping tablespoonfuls 2 in. apart on baking sheets.  Bake at 375 for 8-10 minutes or until lightly browned.  Cool for 1 minute before removing to wire racks.

Yield:  2 dozen

Baking part 2

Here is the recipe for the Andes Creme de Menthe cookies

Ingredients:
1?2 cup butter, softened
3?4 cup brown sugar
1?2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons vanilla extract
2 large eggs
1 (10 ounce) package Andes mint baking chips
2 2?3 cups all-purpose flour

Directions:
Preheat oven to 350°F.
Blend butter, brown sugar, white granulated sugar, baking soda, baking powder, vanilla and eggs until ingredients are mixed.

Add Andes Baking Chips and mix. Add Flour and continue to mix until all ingredients are well blended together.

Cover and chill in the refrigerator for 45-60 minutes.

Spoon out approximately 1 oz of dough per cookie.

Form a ball and then slightly flatten.

Place on non-stick baking pans and bake for approximately 8-10 minutes.

Cool on pans for 2 minutes, then remove.

No bake cookies

Its been a very dreary week here in Michigan, which makes the days go by so very slow! I had a craving for something chocolate, so off to the kitchen to see what I had on hand to make that wouldn't take to long. The light bulb went off when I saw the cocoa in the cupboard.

Slightly melt the butter

Add the sugar

Milk

Cocoa

Stir all together until blended and butter is melted on low heat. Bring to a boil and boil for 2 minutes, stirring constantly

Remove from heat, and add the peanut butter

oatmeal

Mix well

Then drop by tablespoonful onto wax paper and allow to cool/set (this is the hardest part for me! I want chocolate NOW!!)

2 cups sugar
1 stick butter
1/2 cup milk
2 TBSP cocoa
1/2 peanut butter
3 cups oatmeal
1 tsp vanilla

Combine the sugar, cocoa, milk and butter in pan over low heat until the butter is melted. Stir until thoroughly blended. Increase heat, bring to a boil, boil for 2 minutes, stirring constantly.

Remove from heat and add the last 3 ingredients. Stir and then drop on waxed paper to cool.
