Cheddar Bacon Potato Soup
Ingredients
1 pound of bacon, cut into small pieces
1 1/2 cup chopped onion
1 cup chopped celery
5 cups potatoes, peeled and diced
6-7 cups chicken stock
1/2 pound velveeta cheese
1 tsp salt
1/2 tsp cayenne pepper (or to your liking)
1/2 tsp black pepper
1/2 tsp nutmeg
1 1/2 cup instant potato flakes
Directions
Fry bacon until crisp. Remove from pan, drain off all but 2 TBSP of the grease, then add the onions and celery, cook until transparent. Add the chicken stock, potatoes and spices. Cook until potatoes are tender. With a potato masher, mash the potatoes to your likeness, I like a few chunks left in ours. Add the potato flakes, stir well, then add the cheeses. Do not bring to a boil once you add the cheese.
