Tasty Tuesday ~ Smoky Sweet St. Louis Style BBQ Ribs

Made ribs for dinner they turned out great! The boys didn't make it over, so we have plenty of leftovers for the week!

Ingredients

2 racks (5lbs) St Louis-style ribs
6 TBSP Dijon mustard
2 (2.5 oz) pkgs BBQ rub - like McCormick Memphis Pit
2 cups prepared barbecue sauce - like Sweet Baby Ray's
1/4 cup rice vinegar

Directions

Heat oven to 300°

Remove tough membrane on underside of ribs. Place ribs on double sheets of heavy duty foil. Brush both sides with mustard. Season with BBQ rub. Wrap tightly. (Can be done the night before.)

Place on baking sheets in oven. Bake 4 hours.

Meanwhile in bowl combine BBQ sauce and vinegar; whisk until well combined. Transfer half of mixture to second bowl. Unwrap ribs, drain juices and discard. Cut ribs into portions.

Heat grill to medium-high for direct cooking. Brush ribs with half of the BBQ sauce. Grill 10 minutes, or until lightly caramelized and browned, turning once. Let sit 15 minutes.

Serve with remaining sauce.
